High Fat Thread

It would be cool to start a thread for high fat eating ideas and experiences.
We recently went gluten free and I've been increasing my fat intake, and I feel wonderful!
I'm EBF'ing a two month old and have about 35 lbs to lose, but I don't want to feel crappy while I do it.
I'm working on the book Good Calories, Bad Calories and also want to read Primal Body Primal Mind.
Anybody in????

GCBC is a great book!!! Definitely science heavy but great. I wish there was a different title on it though...the title bugs me.

I eat lowish carb for PCOS/insulin resistance. I'm not overweight but do much better (feel better, get more normal cycles) with lower carbs, higher fat, moderate protein.

Hyperlipid's blog is always thought provoking (sometimes makes me think more than I want to!!)

Last post before bed, very tired! Just wanted to say I'm in!

Figured if anyone would get a kick out of 28 month old DS' before bed snack tonight it'd be you all, so:

a "vanillamon" shake (egg yolk, whole raw milk, teensy bit of honey, vanilla, cinnamon)

1/2 avocado

few lard-fried potato chips

1.5 tablespoons butter

.5 ounce swiss cheese

Mostly this was b/c he barely ate dinner, but he is an eater and loves him some fat!!

I just hope he sleeps okay doing all that digesting!

Subbing!

I'm on a high fat paleo diet for candida and to address my newborn's allergies (dairy, gluten, sugar). I feel great! I have about 20 lbs. to lose but it's coming off very very slowly.

My favorite dinner right now...

Grassfed burger topped with caramelized onions (cooked in lots of ghee) and a whole avocado. Occasionally I put some pastured bacon on there too for good measure

Ooh yeah, this is just what I need! After a couple of weeks of going slightly off track I'm trying to get back to gluten-free, low grain and really want to up the fats.

Tonight dinner is going to be chilli (with bone broth and beef liver in it) topped with cheese, creme fraiche and I was thinking some onions fried in butter and beef dripping too...all that's missing is some avocado!

My favorite way to eat fat these days is to buy a whole brisket and smoke it all day without trimming any of the fat off. Then for leftovers I fry slices of the meat and fat in a cast iron skillet with bacon grease.

I've been eating very high fat (meat, fat, goat cheese, and a little fermented dairy and veg) for the last few weeks with great results. I was diagnosed with hypothyroid a month ago, so I'm trying to heal that and lose the weight I gained from it. I'm slowly losing the weight, but the most exciting thing that's happened in the last week or so is that my hair is not falling out like crazy anymore! : I have high hopes that it will regrow and be as thick as it used to be.

It's also so nice to not have to eat so often. The fat is definitely keeping me satisfied and my blood sugar/insulin levels steady.

How are you adding the beef liver in your chili? Would you be willing to share your recipe? Sounds yummy!

How do you smoke it all day? Do you have an outdoor smoker?

My mom used to make brisket all the time, but I haven't in years because I haven't found a clean source.

After doing FitDay.com for a couple weeks, I found out I'm getting 50-65% of my calories from fat, so apparently I'm in.

Carnitas are good (don't trim the pork, put liquid in, then as it cooks down, the fat is rendered). We also fry in bacon grease. The coconut milk and egg yolk creme brulee I made the other day was pretty good. I put pine nuts on my salad every day for more fat. We're gluten free too (and soy, corn, dairy as well as some others). We do a lot of coconut milk (smoothies, baking), coconut milk yogurt, coconut oil (for frying). Potato pancakes fried in bacon grease. When you roast the chicken, eat the skin, then take the fat-filled drippings and turn it into gravy (I use sweet potato flour to thicken it). That's what I had tonight. Coconut milk ice cream. I thought I was full from dinner, but I think I'm getting hungry again!

I'm so in! My fav dessert which I am about to have: a few TB of coconut oil, a few tb of almond meal, a little honey, salt, and cinnamon with some frozen black berries or blueberries thrown it. It's get a hard with the frozen berries and kinda tastes like cookie dough.

I wanted to take coconut oil, but I couldn't gag it down plain so I've started melting coconut oil with rapadura and cocoa powder and hardening it in the fridge. I'm actually really loving it!
And the other day my fat content was up over 60%. Yay!

Flavoring and hardening in the fridge!!! OMG that is such a great idea!!!! I can't gag it down either, and it's not the taste but the oiliness. I LOVE fat, but not oil, ugh!!! I just hope the month of gagging it down hasn't ruined the taste for me! So do you put it into a mold to harden it? What do you use (specifically what size?)

So what do you guys do when having company over? Add to this the fact that DH's sister is vegetarian bordering on vegan and MIL is pretty hook-line-and-sinker for the low fat stuff. She'll eat something with fat, but just a little and with tons of veggies on the side.

We're having bunless burgers with mushrooms (in butter), carmelized onions (in butter) and swiss. I am making a big tomato/cucumber/red onion/dill salad on the side. I have a (non-soy) veggie burger in the freezer for SIL.

But DH wants to start having a family dinner a few times a month and I am going to have to find some other ideas. I prefer not to make a carby/grainy meal and just eat around the carbs, you know? I don't want 2 yo DS to feast on carbs all evening and then crash/"act up". So a meal like above with one half high fat and the other half low fat (but not grainy/starchy) so the various people and pick their proportions. I can have a burger and a little salad, MIL can have half a burger and a huge salad. Any ideas of other such pairings?

NOTE: DH's family is Italian, so no "zucchini pasta" suggestions, please, they'd flip! I tried brown rice pasta once, and though they gave a sincere nod to the nutrition, the taste/texture issue was a real problem!

Not to stray too far but Quinoa pasta (Ancient Harvest) is far better and pretty close in texture to other pastas. I will not buy Rice pasta again, especially De Boles. Don't know the nutritional differences but we are gf so that is what I buy.

For guests... I made a picnic for my family last week and really just cooked the way I normally do but had everything separate so people could pick and choose from what they wanted. I had a pork butt roast cooked in the crock pot, a quiche*, some sausages grilled and cut up and lots of fruit and veggies on the side.

*Quiche was made from about a cup of kefir-soaked shredded potatoes as the base and then 4 eggs, a package of cream cheese, and 4 1/2 cups of shredded cheese. Yummy!
