Unbleached All Purpose Flour??

What are you using when the NT & WF recipes call for unbleached all purpose flour? Brands? Organic? Wheat? I'm currently using unbleached white flour (Gold Metal I think) because it's all we can get in our very, very rural area. I'd like to switch to something a bit more healthy but will have to bulk order it and would like some suggestions & opinions.

I use king arthur....I do lots of baking and bread making (including some bread from all purpose flours) and really like how king arthur turns out. WW flour tends to be too "heavy" in a lot of the bread recipies i make, if they do not specifically require ww. Also, I do not use organic, because on our budget I have to choose which foods are my organic priority. From the reading I've done, wheat does not retain pesticides as much as some fruits and vegies go, so my organic $ go to fruits, vegies, and meats.

Thank you. I felt I was missing something or doing something wrong. I have always baked bread but you hear so many stories on how white flour is so bad for you that I assumed I was missing something with NT & Real Food. We do not have organic flour choices yet so I'm stuck with the regular stuff. I wish we lived further north and I would purchase and grind my own grains however there is no way we can afford to have grains or organic flour shipped to us in any larger amounts. I'm still waiting on our grocery to bring in organic flour. I'll try the King Aurthur brand if I can find it.

I have been using a combination of things...sometimes just unbleached white from the store...(usually King Arthur)...sometimes King Arthur's white whole wheat flour and now I bought some sprouted flour online that I've been using too occasionally. It kind of depends on the recipe though. Muffins and quick breads can go whole grain easily but pie crust I always make completely white.

I just bought and received some sprouted/sifted wheat. I wonder how it will work as a replacement for unbleached white? I purchased the sifted because it's supposed to be lighter for cakes and pastries. We shall see...
