coconut kefir - what is it supposed to be like?

i made coconut kefir by adding a sachet of kefir powder to some coconut water and left it on the counter for 2 days it looked bubbly and cloudy, as i didn't want to drink it straight away i put it in the fridge for a few hours and i've just tried it and its not atall fizzy - is it supposed to be fizzy? or would it just go flat if put in the fridge? it did just taste exactly how the coconut water tastes and not at all different. so i'm just wondering if its kefir or if it just didn't work out? any ideas? thanks.

I can't say for sure, because I haven't done coconut water kefir, but when I make water kefir I have to do a secondary ferment to make it bubbly. First I ferment in a jar with a cloth on top for ventilation for 24-48 hours, then strain the brew, pour it into bottles, and cap. I let them sit out for another day, then put them in the fridge. They get nice and fizzy.

Well, I can tell you it won't get fizzy if you don't trap the fizz. You have to put it in a tightly sealed container and allow it to ferment in order to get fizz.

I only make coconut kefir with REAL water kefir grains. So, I can't help you there. REAL kefir grains are free for the asking in Swaps: Kefir Grains and Kombucha Scobies
