How many chicken bones do I need to make stock? Like, should I save up a few from the breasts and leg quarters or just make it as I use them?

If I'm not cooking a whole chicken, I usually save the bones in a freezer bag and add to it over time and then throw those bones in with the carcass next time.

I also only make it when I have a whole chicken. I find this makes enough for us for some time. If you don't cook whole chickens, save it in a freezer bag until you have the approx equivalent of a whole.

I think that depends on how big your stock pot is!

We never make stock unless we have a whole carcass, or the equivalent of one. We keep pieces in the freezer until we're ready to make a pot. We usually do a big pot with 2-3 carcasses at once, which gives us 3-4 quarts of stock for the freezer or a soup project.

I cook with a lot of bone-in breasts, and I tend to cook them 2 at a time. I save the bones until I have a gallon size ziploc full. That's about 6 of them for me. I make stock with that, and it usually makes about 4 quarts.
