leeks

so i harvested all my leeks today....our weather has been so random and i have some rotting veggies due to lots of rain (tomatos and squash) and since this is my first yr with garden, and i think i probably could have left them a few more weeks, i didnt wanna risk it! but, they are beautiful! i just cut off all the dead green tops and soaked them in cold water to get some dirt off and i have about 10 really nice leeks

what do i do with them? i have cooked with them before, like one at a time in a soup or a stock, but really i dont have anything i regularly use them in, but i really want so make something good from them and i dont know how long they will stay fresh. i probably have 6-7 cups if i chopped them.

How about quishe or leek tart?

thats a good idea! the only other thing i found were some soup recipes

: I've got about 20 out in the yard right now, and I should pick them by tomorrow.

Saute and cook in eggs
Green bean, potato, and leek salad was good.

I have sliced, washed, and frozen in baggies for leek and potato soup in the past.

I braise them in white wine with thyme, add some cream and pour it over fresh tagliateli pasta. Divine!

that sounds so good.....how much wine and cream and how much leeks???
