so I tweaked the Primal Protein Bar...

and it is so delicious, that I thought I'd share. It isn't so much of a protein bar anymore, but a fat bar. Actually it tastes more like candy.

here's what i did...
1 cup Coconut Sprinkles (from eflf, basically 1 cup shredded coconut and 1/4 cup maple syrup)
1 cup coconut oil
1/2 cup butter
1/2 cup peanut butter
1 tbsp vanilla
1/2 tsp salt
1 cup pecans, chopped
1 cup almonds, chopped
1 8oz. pkg dried blueberries

melt butter, coconut oil, and peanut butter. mix the rest of the ingredients together, and then mix into the butter mix. pour into a pan and stick in the fridge. makes 12 large servings. each serving has 617.5 calories, 55.86g fat, 28.27g carbs, 7.8g protein. 78% fat 5% protein 17% carbs. Next time I will use less maple syrup and more almonds i think.

Holy crap, that just sounds delicious.

Why exactly are we making this?(Because you know I'll be making a panful asap) I think I need a good reason to justify eating them

High calorie energy bar

Wow, that sounds delicious but one serving contains 1/2 of my daily caloric consumption. If I got lazy I would make these and eat two bars a day; never have to worry about cooking again.

Whoa, thank you SO much! I need to get more fat and calories into my ds, and we are on scd, and only doing occasional dairy. This sounds awesome for him. I am going to make some tomorrow! (With a few variations for SCD)

eflf = eat fat lose fat by sally fallon

i usually only eat a half serving myself. as for why, well i'm trying to increase my fat consumption. maybe i should add it to the thread about fattiest snacks.

There's a thread about fattiest snacks?? Could you please post the link for me? My kids need more fat and calories. We aren't doing yogurt and cheese right now, only occasionally.

going by memory... you mix 1/2 cup maple syrup and 2 cups dried shredded coconut. place on a cookie sheet and bake at a low temperature till dry. then crumble and store in the fridge.

Great ideas! I always have some of the original bars in the fridge to eat but it's always nice to try something different.
