vegetable gums

I am wondering if my dd has a problem with vegetable gums. I had been consuming xantham gum without a problem and recently started eating food for life brown rice tortillas. They are made with vegetable gum - cellulose and xantham.
I noticed a change in her stool to green mucousy again and poor sleep. What are vegetable gums and can they cause problems? I also ate a few mangoes this week so I am not really sure which one is the problem.

I know that xanthan is corn. I believe cellulose is sometimes corn as well. My DD2 can't do xanthan (or any corn). DS also can't do guar gum (guar is a bean/legume). They can both do karaya gum (which is a tree). Who even knew there were so many gums? Maybe pull out both the gums and the mango, and then try one at a time to see which is the culprit.
