I have a ton of Muscadines/Scuppernongs (a type of grape grown in the South) and I would like to make jelly with them. Is there a good low/no sugar recipe out there that anybody has?

Pick up a box of Pomona's Universal Pectin, sweeten it to taste, use the gel test to be sure it will set and you're golden.

I buy that pectin that says for low or no sugar needed. I usually sweeten my jelly's with honey to taste. The directions are in the pectin box and are really simple. HTH!

Did you know that you can also make cobbler/pie filling with them? Pop the skins off and boil with sugar to taste until tender/cooked down as much as you like. You can throw the meat/pulp in too, but you have to de-seed them, which is time consuming. Then freeze or can. Go light on the sugar b/c you can always sprinkle in more when you are baking the pie/cobbler.
