Everything I've ever read by her I've enjoyed. She's one of my favorite authors-I only recently started reading her sci-fi, and boy was I missing out. If you loved her fantasy, you'll love the sci-fi as well, even if you don't "do" science fiction.
My favorites-
The Dispossessed
The Left Hand of Darkness
Rocannon's World (bought as an omnibus edition with Planet of Exile and City of Illusion, the other two were also great)
Next up for me is The Telling.
Gifts
Voices
Powers (these last three are part of a new fantasy trilogy that was billed as young adult but was absolutely outstanding)

Left Hand of Darkness she is very famous for.
I read Word for World is Forest and really enjoyed it but I think finding copies of that can be challenging.
A friend of mine read Lavinia and really liked it. It was the retelling of Aenid from Lavinia's perspective.. but I can't recall more of it than that.
The thing is though, Earthsea is fantasy, her other stuff is mostly Science fiction.. (I mean, I realize the line is often rather fluid, but if I recall correctly, that is the line that Ursula drew herself..) but if you liked the Earthsea series you may or may not like her other stuff.
And her stuff is listed here (I always prefer to read things in order)

I'm thrilled that she has written more books about Earthsea (now no longer a trilogy but a "cycle." Of these, I love Tehanu and The Other Wind.
Her most recent YA (not that it needs a label) series, Gifts, Powers and...(I forget the last one) are excellent, too.
Woman's a national treasure.

Left Hand of Darkness is probably my favorite of hers. Lathe of Heaven was pretty good, too.
ETA: her short stories I love, too. I think she wrote the one about the werewolf, sort of... and didn't she write "She Unnames Them"? And/or the one about the women going to the north/south pole? I might be mixing up some stories from the anthologies I've taught from over the years, but they're all really good. Love all of those.
