Ground pork?

What would you do with ground pork? I have about a pound. I normally would use a mix of ground pork & beef to make chili or meatballs, but I don't have any beef, and am not sure how they would taste with pork only.

What do you think? Thanks!

I sometimes season it heavily and make sausage with it (either Italian or breakfast). Then, you can make whatever you use sausage for--spaghetti, pasta, biscuits and gravy (: ), whatever.

I make stuffed poblanos with pork as well.

I have a friend that raises hogs. She uses ground pork for everything. Sloppy joes, hamburgers, spaghetti, chili. Everything.

What about a version of pork tortiere? It's a big hit with the whole family.

How about wontons/dumplings? I usually put some soya sauce, grated ginger, garlic, and sliced green onions in them. Good with a dipping sauce or in a simple broth.

Hard boil 4 eggs. Cook enough rice for four people.

Mix 1/4 cup sake or dry sherry, 2 tbsp. soy sauce and 1 tbsp. fresh grated ginger in with the ground pork, fry it up.

Serve up rice in four bowls, divide the meat over the rice.

Saute 3 cloves chopped garlic, 6 chopped green onions and 2 more tbsp. fresh grated ginger, about a minute. Add one bunch chopped asparagus and 1 cup chicken broth. Cook till asparagus is just done, 2 to 3 minutes.

Divide the vegetables and broth over the four bowls, top each with a slice hard boiled egg.

We love this.

LUMPIA!

We rolled a whole bunch yesterday and put them in the freezer.. our recipe "adapts" but usually it is something like...

ground pork browned
shredded cabbage
bean sprouts
raisins

stir fry and add to lumpia wrappers (like kind of like tortillas, but SUPER thin)..

DP helps me so I spend my time separating the wrappers (the package we get is like 25 smooshed together for some reason) and then dp puts the filling in and rolls them.

We roll just like a burrito roll but the "shanghai style" is more long and skinny like a pencil.. then they are fried..

We rolled some yesterday that we didn't fry and stuck in the freezer for another day!

I would make mini meatballs using the pork, apples, onions and sage. Then make a creamy white gravy using the drippings and serve with potatoes fried in lard.
Ugh - I'm drooling.
