1 pound of organic strawberries? we almost never buy strawberries because organic is out of budget but these were $1 for a pound of organic strawberris due to being a little over ripe, no mold just a few soft spots on some. so normally i would eat them raw, maybe make some pound cake and whipped cream, but these are a little past that stage. was thinking a sauce or jam, never done that before, and how to do it? recipe? or freezing them for smoothies. any suggestions?

I'll freeze it for smoothies....:

SLice them and put them on waffles or pancakes

add them to bento lunches

put them in smoothies..

chop and add to gelatin

put in homemade yogurt

make homemade ice cream

put on ice cream

make a milkshake from scratch

give them to my friend that makes jam (I don't make it when she does such a great job!)

freeze them for later..

slice and make into sandwiches with cream cheese

layer on a bagel

strawberry daquiris

Make this cake. You will not regret it.



Strawberry Cake

Makes one 10-inch cake

6 tablespoons unsalted butter, softened, plus more for pan
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
1 large egg
1/2 cup milk
1 teaspoon pure vanilla extract
1 pound strawberries, hulled and halved

Directions
Preheat oven to 350 degrees.
Butter a 10-inch pie plate. (I usually cook it in an oval gratin pan, but you can use a pie pan, too.)

Sift flour, baking powder, and salt together into a medium bowl.

Cream butter and sugar till nice and fluffy; mix in egg, milk, and vanilla.

Gradually mix in flour mixture. Transfer batter to buttered pan. Arrange strawberries on top of batter. Sprinkle remaining 2 tablespoons sugar over berries.

Bake cake 10 minutes. Reduce oven temperature to 325 degrees. Bake until cake is golden brown and firm to the touch, about 1 hour. Let cool on a wire rack.

i would lacto-ferment them. strawberries are the bomb when they are slightly fizzy!

If they're already starting to turn, then I'd do anything that would cook them - ice cream, sauce, etc. I wouldn't want to do more than really heat them up a bit though - to keep their strawberry goodness as intact as possible, so I'd probably stick to something pretty basic.

I agree, clean and hull and slice for freezing OR make freezer jam with them. We only eat freezer jam anymore because it taste just like fresh and is like 1/2 the calories 1/2 the sugar...mmmm yummm.

jam sounds good. have always wanted to make some but never tried.
can anyone give me a freezer jam recipe or a place to find one?

however I think its ball that makes a packet of sugar/pectin mix that makes roughly 4-6 of the smaller size jam containersful? I love that one! bal also sells specific freezer jam containers (plastic jars with screw top lids) for us people scared of glass in the freezer!
