You are correct that there is a lot of variance between UU congregations.
When my dd was 7 her RE curriculum was "Free to Believe", which my church is still using this year for 6-7 year-olds. Here is a very brief description:
Overall, I like this curriculum. If the church you are visiting uses it, your son may find that it takes longer than he'd like to get the "big questions" part because IIRC most of the Fall was spent on the principles and sources. I found this to be a positive because it sets the background for a religion where each individual is searching and helped my dd get a sense of spiritual identity - what it means to her to be Unitarian Universalist.
Your local UU church may offer something completely different for kids that age, but it will almost certainly offer some kind of formal RE that includes encouraging and guiding kids in thinking about and exploring their own spirituality.
