How long are milled grains good for? and other Q's

I found a bakery here that uses local wheat and grains to make their bread, and they also sell milled grain. They mill it every morning and sell it that day. If I buy some that's freshly milled, how long is it good for? Does it need to be refrigerated? Can it be frozen? Is $1 a lb a good price for organic fresh milled wheat?

I know someone knows the answer on this board. So I stand to be corrected. But basically my understanding is that there are changes in the flour starting right after it is milled. So it depends on what you mean by "good". Are you talking about fat rancidization? the phytase content? I'm sorry but I'm not sure of the answer - but if you don't get quite as much information on this board as you would like, check out http://www.thefreshloaf.com where they have a forum on milling flour. There are some really knowledgeable people on that forum (as there are on this one, too! )

I'm not sure about the health issues, but $1/lb for freshly milled wheat flour is about the same as you'd pay for Bob's Red Mill organic wheat flour (not freshly milled) at the grocery store. Hope that helps.

I guess what I mean by 'good' is how old it would be before I'd want to not use it at all. I've been using store bought flour for years and am new to the whole idea of freshly milled four, and all I really know about it is that the fresher the better. So, I guess I'd like to hear from anyone who buys freshly milled flour and how/when they use it and store it.

Ideally of course I'd like my own grain mill, but that's a ways in the future, so I thought this was a good alternative in the meantime. I can't run to the bakery every two days, though, so storage is my main concern here.
