Lunch Meat ~ Cream Cheese ~ Cucumber ~ Sunflower Seeds

Who ever it was that mentioned this as a great snack, was TOTALLY right, this is a great snack and my kids even loved it. I made myself 3 little roll up things of this for lunch and it hit the spot.

this sounds really good and i wonder if i could make it work with veggie "meats!" i make a seitan deli slice that is scrumptious....if i can get up the energy to make a batch.

okay wait- so you spread the cream cheese on the deli meat, and put the sliced cucumber inside and do what with the sesame seeds? put them inside too? do you stick them to the cream cheese so they dont fall out?

can you tell that i am intrigued?

and i have all the ingredients too...

We've done roll-up thingies but ours are meat on outside, slice of cheese on top and then a dill pickle. Rolled up and held together with a toothpick (if you want to be fancy ). Love those!

put cream cheese in the meat, lay cucumber slice in it, sprinkle or cover inside w/sun flower seads, roll up, eat. :

My midwife said no lunch meat! Others don't say that? I heard that through two pregnancies already!

Ah yes, I totally forgot about this. I want to say getting fresh from the deli makes a difference, but not sure on this one. I honestly only eliminated lunch meat from my diet in ONE pregnancy and that was Bodie's, and I only did it because I had experienced so much disappointment at that point I wouldn't take any chances. Not that I would chance anything this time, I just forgot.

The concerns with lunchmeat are listeriosis and nitrates. Nitrates can be easily avoided if you read labels and buy quality meats, and listeriosis can be eliminated by heating meats until they're steaming hot.

yeah you can reheat your meat to steaming and then let it cool down and eat it. tastes the same.

Heck no, this is the best meal I've tasted in weeks , next to Moe's Southwest Grill, I get this salad (not on the menu) and it's super hot from the fresh cilantro and jalapenos, and the last one I had was the BEST FOOD I"D EVER TASTED!!!

Haha, I get tons of folic acid, but the SFS are awesome anyway!!!

So I had it again today, but this time I heated the meat on the stove first, let it cool and ate it that way. So good!!!
