What did I do?

Ok so I made crabapple jelly. The first batch I followed a recipe and although slightly weepy it tastes great. Next batch I made an oops. I was meaning to boil down the juice to make a stronger flavour and colour but I added the sugar while I was boiling it down. So it simmered for a couple hours and when I finally got to it it was brownish orange. Did I carmelize the sugar? Is it still edible? I know I should have added the sugar after simmering and just let it boil for 10 min or so then but I realized my mistake after I noticed the colour change. What is it going to taste like?

So long as you didn't let it scorch, it will just have a deeper caramel-like flavor. I've done this with cherries, just by cooking it too long (without adding sugar).

Otherwise it's fine. Just taste to be sure you don't taste any burnt notes.

You probably did caramelize the sugar. Its still edible, just think of creme caramel, its made with burnt sugar. The flavour will probably have a slight burnt sugar taste, but that could be good too.

yep tastes syrupy and it's actually pretty good.
