Bushels of potatoes!! Ack.

I just saw another thread about using up potatoes but I still felt moved to share. We grew potatoes this year thinking it would be tough and I think we seriously have 45-50 bushels of potatoes - fingerlings, caribe, purple, all red, butterball, carola - and no good way to store them past a couple of months. I really need potato help!!

Do you have a freezer? How about a closet? Any cool dark dry place will work - you may need to put shelves into a closet for air circulation purposes. If your only option is to eat them up, then I'd start by including them in every meal. I'd also research the breeds you have... some keep better/longer than others. Some need to be eaten NOW, and some can happily sit for 4 months.

For freezing, I'd probably chop some, shred some, julienne some and par-cook them then freeze so that when you pull them out they cook quickly. Mashed also freezes decently.

For eating, just start including them in every meal, either as a side dish or in the main dish (stews, curries, shepherds pie, I've even been known to do a one-pot mash with meat and veg when I needed to use up potatoes).

can them! they're a great addition to meals without having to cook them first. you'll need a pressure canner though. i'm about to buy about 80 lbs of potatoes to can for the pantry.

you could also sell some or even gift them if you feel they'd go bad. Friends/family would probably love some, especially the more special/expensive types.

Contact food pantries/banks as well. They'd probably love to take a bushel or 12 off your hands.
