Tasty chocolate cake with coconut flour recipe

Hi ladies,

I bought coconut flour recently. Without knowing much about it, I tried to experiment with it. I tried to do pancakes (50% whole wheat and 50% coconut). It didn't go too well, they basically were falling apart. Then someone mentioned to me that there is a way to bake a very tasty chocolate cake with coconut flour. If you know a recipe of a good relatively healthy chocolate cake with coconut flour, please share. Coconut flour is so expensive, I hate throwing it away.

I just bought coconut flour myself and Cooking with Coconut flour By Bruce Fife. I have not tried any of these reciepes yet but my MIL has. She says they are good. She has not tried the chocolate cake though so I don't know how it will come out.

3/4 c. butter or coconut oil
1 c cocoa powder
12 eggs
1/2 cup coconut milk or whole milk
1 1/2 cups sugar
1 t salt
1 t vanilla
1 c sifted coconut flour
1 t baking powder
frosting

Melt butter in a sauce pan over medium heat then mix in coca powder. Remove form heat. In another bowl mix together eggs, coconut milk, sugar and vanilla. Stir in cocoa mixture. Combine coconut flour and baking powder and whisk into the batter until there are no lumps. Pout into greased pan and bake at 350 for 35-40 minuted or until knife inserted comes out clean. Cool. Frost.

You can substitute coconut flour for about 10% (some sites say up to 25%) of the total flour in a recipe without having to make other adjustments.

More than that and you need to adjust the liquids as well.
