what do you stuff in your summer squash?

a friend gave me a large patty pan squash and I am looking for stuffing recipes... any suggestions?

I've been stuffing mine with rice and shredded cheese plus any veggies from our CSA box that are handy: onion, tomatoes, bits of kale, shredded carrots etc. Topping with bread crumbs and butter (or for gluten free hubby, finely ground almonds or other nuts with butter dabs)

Bake and then broil....YUMMY!

ooh I like the idea of nuts...and I have all of those ingredients...thanks fireflies...I also grew round zucchini so I could still use other ideas...

apples, walnuts, cinnamon, bread crumbs or oats, butter, sea salt, and a drizzle of honey

bread crumbs, egg, sauteed mushrooms/onion/garlic/carrots/celery, parmesan cheese, sea salt, pepper, and Italian parsley

rice, sauteed stir-fry veggies (any), fresh minced garlic and ginger, tamari, an egg, chili paste if you want spice, a drizzle of honey, and a dash of toasted sesame oil. Top w/toasted sesame seeds

rice, black beans, sauteed onion/bell pepper/garlic, cumin, Mexican oregano, paprika, ground corriander, toasted anise seeds, an egg, sea salt, and top w/cheese if desired, squeeze of lime and fresh cilantro before serving

rice, sauteed veggies chopped up, curry powder or paste, sea salt

rice or barley, Greek oregano, tomatoes, lemon juice, sea salt, fresh mint, garlic, onion, black olives, feta cheese, and an egg

black beans, rice, oregano, lime juice, orange juice, cumin, sea salt, and an egg

stuff with ratatouille and parmesan cheese shavings

MMMM, this gets me wondering how many more squash we have out there....My son absolutely adores stuffed squash.

I didn't even get to the quinoa ideas in my head, lol. I had to stop and change a diaper.

sounds great! how different is mexican oregano and greek oregano? and the ratatouille sounds good too, I have lots of eggplant...so many ideas...

To me, Mexican oregano has a ton more flavor. I use it when I use particularly strong herbs/spices in the dish. I much prefer it in both my Mexican dishes and my Italian dishes. But always use Greek w/Greek food.

I can't believe I have never heard of Mexican oregano!!! I will have to look for seeds next spring...

I buy it in the Mexican section in the regular ole grocery store. But I'm in Texas, and we have alot of Mexican items available here...

Yeh, that might make a difference, I am in NW BC a few hours from Alaska...
