Im am getting a food dehydrator for my birthday and I'm so excited

I am looking for a good beef jerky recipe...my boyfriend loves beef jerky (personally I've never even tried it before) and I wanted to be able to make some for him. Thanks so much!

I just use a nice strong mix of salt and spices/herbs. Trim the fat. Slice the meat (when it's still mostly frozen) into 1/4" slices (or thinner). Salt/season and let sit overnight in the fridge, then dehydrate at 155 for 4-8 hours, until it's all done. I flip 'em over when the top is dry (if your meat isn't terribly lean, you may have to blot the oily fat), about halfway through.

I'm a fan of thyme, smoked paprika, and chipotle tabasco in the rub/marinade.

This was the original inspiration, but I've moved on a bit:

(I don't slice it that thick--my jaw would fall off.)
