Can I reuse this chicken?

I made chicken & dumplings last night. I pulled the "good" meat off of the bone to put back into the pot with the veggies & dumplings, but there was a good amount of fatty, not so appealing to kids meat as well as skin left. I threw it all into a container with the bones and saved it because it seemed like there has to be something I can do with it. It has been pan seared, then boiled. Can I boil it again and make broth or something? I'm trying to be more resourceful when it comes to kitchen scraps.

I'd lop up some unpeeled washed carrots into chunks, celery even with the leaves, onion, with the skin on and everything, and the skin/fat/bones and make chicken broth. Just bring to a boil and simmer for a few hours. That's what I do. When it's done, strain everything out and keep the liquid.

If there's a good balance of meat/skin, I'd probably just toss it in the FP with some mustard, maybe some onion or pickle - and make a chicken salad. No mayo needed.
