we get so much cereal from wic and dont know what to do. we usually eat it as a sweet snack, not for breakfast. i make dh rice krispie treats, i think they are gross but he loves them and has a super sweet tooth so they are a quick treat to make him rather then cookies. what can i do with all this cereal? same goes for the juice, we rarely drink juice but i still get some to have on hand. anyone use juice as a sweetener in baked goods or when making jam? would love to try that but need a starting point like how much to use or if it needs to be reduced.

Just don't use the checks and when they expire, destroy them. That's what I ended up doing with the extra milk checks. Who could drink all that milk in a month, anyway? And I turned down the formula checks and the infant cereal checks after throwing them away for first few months. But it seems that WIC would rather have the clients throw away unused checks than not issue them in the first place.

Applesauce Muffins
2 cups whole wheat pastry flour
pinch of salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup apple juice
1 teaspoon lemon juice
1/3 cup brown rice syrup
1/3 cup applesauce
1-2 teaspoons pure vanilla extract
Preheat oven at 350 degrees. Mix the dry ingredients in a mixing bowl. Make a well in the center and mix in the wet ingredients. Combine just until moistened, don't over mix. Sprinkle the top with some cinnamon/sugar if you'd like. Bake in an oiled ten-inch cast iron skillet for 20 minutes. Or in an 8 or 9-inch cake pan for for about 25 minutes. Or in muffin cups for about 20 minutes. y=12 muffins.
Note: The original recipe called for 1 cup whole wheat pastry flour and 1 cup oat bran. Sometimes we just don't need that much bran. lol. I have also used 1 cup whole wheat pastry flour and 1 cup spelt flour OR 2 cups spelt flour and it turned out well.
Also, I have been omitting the brown rice syrup w/the whole arsenic scare w/rice thing and the recipe turns out well, too... that is why we started w/the cinnamon & sugar mixture sprinkled on the top. Anyway, I hope that's not too complicated. They are very yummy!
PS-You can also use regular milk or rice milk in place of the apple juice and it turns out well, too. Can you tell I've made this recipe a lot!

I use apple juice in my granola recipe...YUMMY!!! You could also freeze in an ice cube tray and once frozen stick in a baggie. Then whenever you want a juice just stick it in a cup of cold water and wahla pre diluted juice! You can also make juice popsicles with them! as for cereal, get the healthist kind you can and donate it!

I make jello with the juice, canned fruit, and powdered gelatin. It's not the healthiest thing in the world but because it's solid you only eat a bit at a time.It makes a nice dessert treat.
Also, with apple juice juice I make fruit compote. Combine the juice, mixed dried fruit, some peeled, chopped apples or pears, and whole cinnamon and cloves (you could use apple cider spice or other spices of your choice). Bring to a boil and cook for about 15-20 min. at a simmer, until the fruit gets soft. Very yummy on a cold day!

When we used to have wic we used the juice for frozen treats, and mixed with yogurt and fruit for a smoothie. I liked to get the grape nut cereal and sprinkle it on my yogurt, I think it does have corn syrup in it tho.
I haven't gotten wic in quite some time now, and STILL have juice in my freezer!
