Spam me with your pinto bean recipes please

I have a 25# bag that needs to be used in a few months. What can i do besides burritos and soup?

Why does it have to be used in a few moths?? I make bean dip (which I use in place of refried beans, much, much tastier!!: cook beans for 24 hours in crockpot (high for first 8+ hours then on low - you'll have to add water a couple times probably to keep from burning, then blend up in a blender: 4 cups beans w/ 1 tsp chili powder, 1 tsp oregano, 1 tsp garlic powder, 1 tsp salt and a dash of black pepper. Delicious!!) and a baked casserole (layer salsa, then beans, then crushed tortilla chips & cheese and bake for like 45 minutes at 350). Also nachos (pile tortilla chips on a plate top with beans, cheese, onions & jalapenos and bake till cheese is melted in the oven. Can be topped with salsa after baking).

mmmm we have been doing spicy pinto beans with roasted root vegetables. cook beans as usual (we use the slow cooker) roast vegetable in small squares with oil and salt and pepper. then add a teaspoon of balsamic vinegar and one chopped chipotle pepper packed in adobo sauce (you can get this in cans in the GOYA section)

easy. and delicious

So? Beans can be kept stored for years w/o them going bad... unless you get bugs in them, they should be fine for years to come!!

Refried beans. Then, you can use them for a side dish or inside burritos, tacos, tostadas, sopes, gorditas, whatever.

Pintos and rice. I season these pretty heavily when cooking. An onion, a pepper (whole), cumin, salt, pepper, Mexican oregano, garlic. Serve the pintos over rice with pico de gallo on top and corn tortillas on the side.

Pintos and rice, more southern style. These I season similarly to the Mexican ones, but I serve them with a cooked tomato chili sauce (like this https://community.tasteofhome.com/forums/t/362742.aspx ) or chow-chow, plus chopped (raw) onions on top. Cornbread on the side. This is one of our favorites. It can be a side dish, but usually more of a main dish.

Chili. I like a mix of half pinto and half kidney in ours.

Taco Bake!

You can make this with or without meat.


1 cup dry, uncooked beans
12 oz. ground beef or turkey
1 packet taco seasoning mix
Sour cream (6 oz. will do)
Cheddar cheese (mexi-blend if you like the taste)
Chopped onion, optional

For the meatless version, use 2 cups dry, uncooked beans and omit the meat.

This will serve 4 people.

Cook your beans. Brown meat if using. Mix bean or bean/meat mixture with taco seasoning packet - use seasoning as is, don't mix with water like envelope says. Put bean or bean/meat mixture in caserole dish - mix in onion if using. Top with sour cream, then cheese. Bake @ 365 until cheese melts (15-20 min). If beans or beans/meat have been refrigerated, add 10 minutes or so. Delicious!!

I serve on top of brown rice.

I simmer them either on the stove or in a crock pot with finely chopped onions and ham hocks.

I get a bunch of beans through WIC and Dh won't eat any beans except pinto, so even if I got another kind they'd just sit there forever. The result is about 10 pounds of pintos in my cabinet... and aside from chili and the beans'n hocks, I didn't used to know what to do with them.

I'm writing down the previous ideas, too!

I have an awesome pinto beans and rice crock-pot recipe...PM me if you'd like it! (And even DH who is "anti-Beans & Rice" eats it and loves it!)

easy pinto bean burgers

i like more seasoning in mine, so i use this recipe for proportions but ad lib. (also i don't use the worcestershire.)

pinto bean and squash soup
, wonderful for autumn/winter

you can have a southwest pasta dinner: pintos, corn, bell peppers, diced tomato, favorite seasonings, served over pasta instead of rice. the same dish with broth is a great soup.

i love mollie katzen's zingy bean dip from Moosewood as a sandwich spread.
