I've been making whey by just sitting a jar of raw milk on the counter for a few days until it separates, then straining it overnight through a cloth. I'm not sure what to do with the curds that are leftover. Can I make them into something or just eat them like that? It smells like something I should be able to eat but doesn't really seem like anything I'm familiar with. Is this what cream cheese is really like?
