As prices for veggies drop....

What can I buy, cook, and then freeze??

I'm assuming I can do corn.

Also, can I make fries and then freeze them with the intention of baking them later? Or I guess it would just be slicing potatoes, seasoning, and then freezing.

Beans are good to freeze. Also tomatoes, we never bothered cooking them first, just bag them up and freeze them. When they get thawed the skin comes right off.

There are links there to the USDA guidelines and a couple other sources of information too.

Pretty much anything can be canned or frozen; it's just a question of what method is best for each one, and doing it correctly so that your food is good (in flavor and safe) when you eat it.

Potatoes don't freeze well. Green peppers and onions can be frozen without blanching, if you are using them quickly; most vegetables require a quick blanch before freezing ....

Potatoes and winter squash both store well (depending on the varieties) if kept in a cool, dry place. Some potatoes are for fresh eating only though.
