Jalapenos?

What can I do with the abundance I have? I was originally planning on making jelly, but that's too much work at this point. I'm 39 weeks and jelly making from scratch does not appeal at the moment.

can you just dry them in the sun for later? I was going to suggest strawberry jalepeno sauce, but at 39 wks.....spread them on a sheet to dry and be done with it!

You can pickle them: just cut an X on the bottom, stuff into jars, ad a few slices of onion & carrots & a clove of garlic and pour brine over top (1 part water + 1 part white vinegar + 1/16 part salt), and water bath can for 10 minutes. They are delicious!! I did 26 pints last year and have done 16 so far - ideally I'll do another 10-20 this year

You can't suggest something like that and not provide a recipe! That sound excellent, even if I don't have the energy to make it right now. In the dead of winter with frozen strawberries and dried jalapenos, I might just find the energy.

I may just wind up moving the dehydrator into the back room and drying onions and jalapenos where I can keep the door open for the breeze.

Stuffed jalapenos...so yummy, and they freeze well. Okay, so they're not super-simple but just thought I'd mention it. My computer is running slow so I can't get you a direct link, but look for Stuffed Jalapeno Poppers on Recipezaar.

That's fabulous! I don't know why freezing them stuffed hadn't occurred to me! I even have stuffing already sitting in the fridge, I made some the other day. It won't get me through all of them, but it should make a good dent.
