They will all keep for months if properly stored. Cool, dry, dark. Buried in sand if you can manage it.
Beets I love to pickle - they're great on salads. Or I roast them and make beet salad, or borscht or just eat them plain with butter.
Carrots can also be pickled for longer preservation. Or grate them up and bake them into bread, cake, muffins, etc. for the freezer. They can also be blanched and frozen for later use in soups.
Can't really help you with turnips. And we just had a thread on potatoes last week, you might want to go looking for it.

This is almost exactly how I make ours, except I love to put a little drizzle of maple syrup and a dash of rosemary on them too!

roasted are my favorite, too. eat as they are, or mix into your favorite cooked grain.
roasted root veggies add great body to soups.
you can add boiled beets to hummus, if anyone in your house is as crazy about pink as my dd
tastes good, too.
mixed mashed veggies: turnips with potatoes, carrots with turnips, carrots with potatoes...
my dd loves our quick refrigerator pickled beets: boil, add to a quart jar with vinegar (about 1/3 cup) and sugar (just under 1/4 cup) salt and cinnamon stick. i am new at pickles...so not too scientific with my numbers. experiment and have fun.
