Whats for Dinner?

Im looking for inspiration. We are a fussy family and some weeks I get into a groove and feel great about what to feed my family, then some weeks Im totally overwhelmed or just bored.

So Im ready to be inspired! Whats for dinner guys?

Meal plan for the next couple of days:

- broccoli cheddar quiche and a salad (i cheated and bought a frozen organic whole wheat pie crust, but you can make your own)

-chicken soup with mini meatballs and some sort of green, spinach or kale...i guess this would make it Italian Wedding Soup...lol

You could check the meal planning forum for ideas too.

Last night - finger steaks (from our own grassfed steer), homemade fries and cucumbers.
Tonight - homemade pizza, bruschetta (leftover bread and still lots of tomatoes in the fridge)
Saturday - meatloaf muffins, mashed potatoes and some other veggie
Sunday - ham, mashed potatoes, green beans (if I can find enough in the garden)

Last night - potato pancakes (from LO garlic mashed taters) and a bunch of veggie sides - clean out the fridge dinner!
Tonight - BBQ sausage/rice skillet, probably w/ big green salad
Tomorrow - up in the air - we'll be out - but probably ploughman-type meal: HM bread, cheese, assorted raw/cold veggies
Sunday - probably pierogi skillet meal
Monday - kathi kebab (Indian seasoned/curry chicken wrapped up in chapati-type flatbread)

Possibly HM Genereal Tso chicken on Tues or Weds, but that may wait till the following week, when DH starts parental leave!

...That's as far as I've planned right now, and farther than I thought I was! We're eating lots of tomato sandwiches and salads right now, too.

Tonight DH is out of town, and DD is at her G-parents until Saturday so it's just me! I'm thinking of driving to get a hamburger somewhere because I'm feeling lazy.

last night was vegetable lasagna.

tonight is herb rice with sauteed kale, mushrooms, onions and garlic on top with a salad.

tomorrow...maybe lentils with cabbage and some other veggies cooked in.

Tonight we are having steak (cooked on the grill), roasted potatoes, carmalized onions and sauteed mushrooms (mmmmmmm) and a spinach and other veggies salad.

Last night we had 15 Bean Soup (with celery, onions, carrots, and chicken) and cornbread.

Last night I made skillet lemon chicken, quinoa with craisins and almonds, steamed trees, and homemade rolls. (Artisan Bread in 5 Minutes a Day is AWESOME)

Tonight I am not sure what to do. I am having back problems and can not stand up for more than a couple minutes with out a ton of pain. I wish I had money and the pizza places would deliver here I am naughty!

I read the fingers steaks and though "hey I bet she's from Idaho"

DH had never heard of them until he moved here. Now whenever anyone visits he's like "you've GOT to have fingersteaks!"

As a matter of fact, I am! Is that an Idaho thing? I just assumed they were everywhere.

Tonight I am making Asian Pork Meatballs with Soy Garlic Dipping Sauce. I am going to serve them with rice noodles.

I did lasagna in the slowcooker. It was delicious!!! We also had caesar salad and garlic bread.

Chicken Roast with Root Vegetables
Simple Green Salad and Cherry Tomatoes with Raw Cider Vinaigrette

Roasted dijon tarragon pork tenderloin, roasted asparagus, and roasted white baby potatoes. It's way easier to just throw everything in the oven when I have a baby to wrangle!

Tonight was Ezekiel 4:9 pasta with chicken, broccoli and my very own made-up yummy dairy free alfredo (I'm dairy intolerant. It's made with sauteed onions and garlic, cashew butter, water, miso, pepper and nutmeg..then puree in the blender). Dessert was fresh green grapes.

Monday: tempeh-veggie stir fry with brown rice

Tuesday: chicken soft tacos (sprouted corn tortillas for me, white flour tortillas for the guests), fruit salad

Wednesday: salmon, sauteed kale (yummy with lots of garlic, ginger and coconut oil), wild rice

Thursday: lamb pita burgers, cumin carrot salad

Friday: our 5th anniversary so we are going to a fancy restaurant right around the corner from our house (Arnold Palmer's. We have lived here 2 years and the aroma of steak always tempts us but it is expensive so we had to save it for a special occasion)

Comfort food tonight: Tuna Noodle casserole, greens, and I am making a huge pot of applesauce today. I serve the applesauce with a little cream on top for a treat.
