Anyone use chia seeds in pudding/pie filling?

Today is my dh's birthday, and he wants a coconut cream pie. I've made the filling in the past using eggs and heating it on the stove, but was wanting to try using chia seeds this time to thicken it. Anyone try this? He's not a big fan on the slimy coat on the seeds, so I'd prefer to grind them first. If anyone has a simple recipe, or just a pudding recipe using the seeds (vanilla preferred, then I'll just add shredded coconut to it), please share! Thanks!

I haven't tried it with chia seeds but I make pudding using ground flax seeds. I don't have the cookbook in front of me or I'd get exact ratios.

I did this once but I don't remember how much of anything i used. I want to do it again, but i just haven't because i've had so much other food around...

I have a Vitamix, so they completely dissapear otherwise my kids wouldn't like it.

I used milk, about a cup and then a couple spoons of chia seeds, a spoon of cocoa and some honey. I also use a couple dates. It set up really nice in the fridge and I love it.

I also stir them in to jam for toast. You can add them to things you couldn't flax, because there is no taste

Here is a recipe- I bet if you added the coconut flakes to that it might be close to what you are wanting. I think we will try this today!
