I got a whole chicken...

I can do anything with it really... Im looking for inspiration.

I can roast it, I can debone it (I have to be careful NOT to say 'bone the chicken' :snort I can DEbone it and do ... well I just dont know!

But Im looking for something different. If you had a whole chicken and you were looking for something different to do with it, what might you do?

I guess Im just looking for some fancy chicken recipes.

Do you want to cook the whole chicken together? Have you ever tried chicken under a brick? It's similar to roasted chicken, but I think more delicious. Here's a good blog post on a grilled version, but you can also do it in a cast iron pan on the stove:

The rosemary and garlic combo is heavenly. Definitely try it.

That looks fab! We dont have a grill tho... or a cast iron pan. I dont mind cutting it up into pieces. Butterflying it like that is a good idea and something new. I think Im going to do that.

Now for the potatoes... Ive got LOTS of potatoes.

I just roasted one for lunch with potatoes and carrots!

For dinner I put some in a tortilla with some onion, cilantro, salsa and cheese and grilled it.

I'll make a sandwich tomorrow to take for lunch @ work.

Then I'll make soup with the rest!
