apples, apples everywhere

I keep going apple picking and we have about 15lbs of apples sitting in the kitchen. I've already made applesauce and now I'm at a loss. Every recipe I can find for apple muffins, crisp, etc seems to have tons of sugar. Anyone have any apple recipes with no to moderate amounts of sugar?

I am in the same boat. I have been searching for a tasty healthy muffin recipe with apple chunks, something I won't feel bad about giving my toddler for breakfast. Sorry I'm no help.

Not really a recipe, and I'm sure this won't make a huge dent in your abundance but what we use apples for is in oatmeal.

Peel if you want, and then cut into smallish pieces, toss the apples into the boiling water a minute or two before adding the oats and voila! Sooo good!

How about drying them?

Adding them to homemade granola?

I cook apple slices in a skillet with a teensy bit of maple syrup (honey would work I'm sure), butter, and a ton of cinnamon. Apples have enough sugar that you don't need very much in the pan. This is so yummy over ice cream, and I cool it and freeze batches to thaw and throw a crisp or crumble topping on, put into a pie, chop up and stick into muffins, quick bread, etc.

I also love baked apples with a bit of maple syrup, raisins, and cream and a sprinkle of cinnamon and chopped pecans.

Also peeled cored apples wrapped in pie crust with a bit of maple syrup and cream and corn starch poured into the core. It will thicken and make maple cream and when you cut into it, it's a little bit of pie induced euphoria!

i make crockpot apple butter with only one tablespoon of molasses to every crockpot full of cut and peeled apples. i add a nip of brandy and a couple of nobs of butter and cook for HOURS until the whole mess is brown and gooey and totally fragrant...i use a potato masher for a batch with texture, and then i take the rest and use my immersion blender to puree the rest for my friends that like it smoother.

I made apple pie filling last night and just used way less sugar than the recipe called for. I always do that with fruit recipes.

I could use some more non-sweet recipes also. Getting a ton of apples in my CSA share.

I make an apple brown betty that doesn't have too much butter, and I think you could cut the sugar down to 1/4 cup. Still tweaking the cooking temp & times, but here goes.

1 1/2 tsps grated nutmeg
1/2 tsp ground ginger
1/2 tsp cinnamon
1/2 cup brown sugar
3 cups 1/4-inch bread cubes
2 tbsp melted butter
Grated rind of 1 lemon
1 tsp lemon juice
capful of vanilla
2 pounds large apples, cored & cut so skin pieces are minimal

Preheat the oven to 375°F.

Combine the sugar & spices and set aside 2 tablespoons. Put the bread cubes in a bowl and toss with the rest of the sugar mixture, the melted butter, vanilla, and the lemon rind & juice.

Layer half of the apples in the casserole and top with 1/2 cup of the bread cubes. Layer the rest of the apples in the casserole, sprinkle with water, and cover with the rest of the bread cubes. Sprinkle the reserved 2 tablespoons of sugar & spices over the top.

Put the lid on the casserole or cover tightly with foil. Bake in the center of the preheated oven for at least 45 minutes. Check for tenderness of the apples & cook longer if necessary. Take the lid off the betty, and bake for 10-15 minutes longer, or until apples are tender and the topping is brown.

I use this muffin recipe but replace the mashed banana with a cup or so of apple sauce and a bit of cinnamon.

Apple pancakes

1 egg beaten
1/3 cup milk or rice milk
1 cup flour
1/4 tsp salt
1 1/2 tsp baking powder
2 apples diced
coconut oil for frying

Heat oil in pan. Add all ingredients together and drop dough into hot oil. fry until golden brown and flip. Cool on paper towels. Top with either syrup, honey or powdered sugar, or eat plain. We have been eating these alot since we picked 100lbs of apples...

I use them in savory dishes - pork dishes with apples, and apple coleslaw come to mind. I don't have specific recipes I love for these - I just google, and sift through the results until I find something I like.

This sounds fantastic! Do you use it on the jam setting in your crock pot?
About how many apples do you use?
This sounds great I might just try it this weekend?
