Roasting Sunflower Seeds

So we grew giant sunflowers this summer, and now I want to roast the seeds. I have never done this before. Every site I look up online has slightly different directions. I am not even totally sure that I've dried them long enough.

Who here has done this before and can offer suggestions? TIA

Here's what I do: I hang the flower heads in the cellar until they are dry enough that the seeds come loose really easily. Then I pick them out, and check for duds-- a certain percentage of the seed husks will have no actual seed-meat inside, and those we compost. The rest I put in the oven at a low temperature (probably around 200) for awhile.
