I was given a big bag of wild goose breasts....I froze them (3 per pack) as I'm not quite sure what to do with them. I've cooked a whole goose before (several times!) but never used the pieces on their own. Any suggestions?

I am so jealous!!! 
Apparently goose breast should be cooked rare to medium rare.
I would sear it in a pan with butter and seasonings, and then roast at 375 for 20 min ish. Let them rest for 10 min while you make up a sauce.
White wine garlic sauce would be super yummy. Use your searing pan and crank up the heat. Pour in 1 cup of white wine and let it reduce, while scraping up all the yummy bits in the pan. Add tons of minced garlic, some cream, squeeze of lemon, salt and pepper.

Boneless or on the bone? And how large are they? Are they closer in size to chicken breasts or turkey breasts?
You can cut the meat off the bone (if not already deboned) and then cut into smaller pieces and use in any recipe calling for chicken breast meat- sauteed for stir fry, breaded and fried for "chicken nuggets" (goose nuggets?) etc.
And the bones can be used to make soup!
If you're cooking the whole breast with the bone still intact, you can just roast it with some spices added, and serve with rice or potatoes, a green veggie, etc.
