Ideally, they should be in the fridge or freezer to prevent rancidity (or further rancidity.) It's hard to find nuts that aren't rancid in stores, but I get mine at TJs & feel like they have enough of a quick turnover that they're probably not rancid. Then I soak them right away & store them in jars in the fridge.
