soaked granola storage

Ok...maybe a dumb questions but let's see..
So I made soaked granola...I coated the oatmeal with butter and co and then added enough yogurt to coat it (found the recipe online or here somewhere) and let it sit overnight. Then, hoping to preserve the probiotics in the yogurt I dehydrated it at 110ish (definitely not hotter than 115). So my first question is did I actually preserve any probiotics?? My second question is do I now need to store it in the fridge? Because it has yogurt on it that could "spoil" or am I way overthinking things? Can I have it both ways, keep the probiotics AND not have to worry about it sitting out?

I make the soaked granola recipe out of EFLF. It is absolutely delicious. It sits out for 2 days soaked in yoghurt and then I bake it at 200F for many hours. I was just about to tell you that I keep mine in the cupboard, but I just looked at the recipe and it says to keep it in the fridge (Lucky I eat it pretty quickly!)

I don't know if any probiotics would be saved (but I eat enough yoghurt and kefir anyway), but it does remove the phytic acid from the oats and it tastes better than any cereal I have ever bought. My DH used to be addicted to boxed cereal (even eat it in bed at night ) but he loves this stuff and we don't buy any cereal anymore. I mix half with raisins and pecans, and half with dried apricots and almonds.

Recipe:

8 cups rolled oats
½ cup melted butter
½ cup melted coconut oil
1 ½ cups whole yogurt
2 cups water
½ cup raw honey
1 tsp sea salt
1 tsp cinnamon
1 cup freeze dried fine cut coconut
2 cups chopped crispy nuts
1 cup raisins

Mix oats, butter, coconut oil, yogurt and water together in a large bowl. Pat down, cover and leave on the kitchen bench for 2 days. Preheat oven to 200 F (about 80-90deg Celcius). Place honey, salt and cinnamon in a small bowl and set in a small pot of simmering water until honey warms and becomes thin. Mix honey with oat mix. Place on 2 parchment lined cookie sheets and bake for several hours until completely dry and crisp. Mix with coconut, nuts and raisins. Store in airtight container in fridge and serve with milk.

It will be fine out as long as it is totally dehydrated and crunchy. I don't know about if its still moist. If you put it in the fridge, it loses a little bit of its crunch, though its still good. (Don't know about whether there are living probiotics in it. probably.)
