Homemade Larabars

I made some and they are delicious! My DH loves the store bought ones, but they are so darned expensive, so I figured I would give homemade ones a try.

Base:
2 parts dried dates
1 part crispy nuts

Put the dates in the food processor until they get mashed up and form a big ball in there. Remove.

Put in the nuts and pulse until they are chopped up. Add to the dates.

Mix them together with your hands - it will be sticky!

Add your favorite flavorings - dried cherries or raisins, some cocoa powder and cinnamon, coconut, or just look on the different packages of Larabars for ideas.

Mix those into your big sticky mess.

Place 2 oz. on a square of plastic wrap and fold the plastic around it to form a bar shape. Store them in the fridge.

I have been planning on doing this as soon as we figure out DS' food sensitivity (which is taking forever!)

I forgot to mention to add the nuts in small amounts to the dates. If you dump them all in at once, you may find that you have too many nuts and the bars won't stick together and will be crumbly (speaking from experience!).

Good idea! I have to wait til the tomatoes are out of the dehydrator so I can make some more crispy nuts...

I am giving up on these since I don't have a food processor and a blender doesn't work (just a big sticky clean up). I am just going to buy them. Plus I calculated that you don't save much making them yourself. I could be wrong but I find that cashews and dates are so expensive. The $1.29 for the bar isn't that bad for an ocasional treat.
Yumm, now I want a larabar!

Here was my figuring...

Larabars are 1.8 ounces at $1.40 a bar = $12.44/lbs.

I can get dates at Whole Foods for $6.99/lbs. and even cheaper through Azure.

I use almonds and can find them on sale for $3.99/lbs.

The other things I put in them are even cheaper. So they come out to be about $5-6/lbs. homemade for us. My DH really likes them and wants a few of them for whenever we have a longish car ride (at least once a month), so it's worth it for us to make them!

Homemade lara bars are my favorite thing to make! The kids just love them!! There are some other ideas/recipes on this blog. We love the cashew cookie ones and the peanut butter cookie ones. Yum!
