soy sauce has natural glutamates, but they aren't as bad (unless your allergic) as added mono sodium glutamate (msg). I think. so its not added, its a natural by-product of the traditional fermentation product. I think that is what is meant.

don't worry about it! i didn't know any of that about soy fermantation, so now i know!

i only had that soy sauce recipe because a friend of mine is allergic to soy.
