Hi all. I wanted to know what you all thought about deep frying in peanut oil. I deep fried some fries in peanut oil a few weeks ago, and it came out great - crisp and not that greasy. I cooked in pretty low heat and there was no smoking. I'm going to do it again tonight, but I'll also be deep frying some scallops, which I think my ds will eat (he ate some fried scallops that my sister had at her home). But now I'm wondering if it's okay or if I should be wary.
