how long can you keep stock in the fridge?

I've had chicken stock in the fridge for 5 days now.. is it still ok to use/freeze?

I would say so...but then I'm not super strict about stuff like that and have been known to use stock that has sat out all night so you may want to see what others say too!

I put my chicken stock in the fridge on the 14th and just had some last night. I didn't even think twice about it actually.

I just go by smell. I hope that if anything is bad enough to make me sick - it had better smell bad too

If it smells good, chicken stock keeps for about a week. If it has an intact fat seal (chicken stock rarely will, but beef fat is sturdier, you can jar it with about a cm of fat and it won't break), about 3 weeks.

Obviously, anything that doesn't smell good, almost certainly isn't good, but about a 6-7 days for stock without a fat seal.

If you add a bit of whey it will keep for weeks.
If it has a layer of fat on the top than you can keep it about forever by keeping the fat layer on it (lift it to scoop stock out, then replace it) and bringing the whole thing up to a simmer every 5 days or so and returning it to the fridge.
