lots of cukes! preserving non-picklers

is there any way to preserve slicing cucumbers? we've got a ton but didn't grow any picklers and there are only so many cucumber sandwiches i can eat.

we pickled em anyway. they worked really well in spears and did come out pretty crisp.

Yea, if you use grape leaves or oak leaves or even cherry leaves, they'll stay nice & crunchy. I slice 'em in disc shapes or spears, they're good either way.

Sun Pickles!

Dissolve together:
5 cups warm water
1 cup white vinegar
1/2 cup cider vinegar
5 tablespoons pickling salt

Quarter slice cucumbers and pack into a 1 gallon jar. Add 3 heads of fresh dill & fresh sliced garlic to taste. Pour on warmed juice to cover and put on lid. Set out in sun for 3 days. Bring in, keep refrigerated.

I just freeze mine and use them in smoothies.
