ground beef main meal recipes?

Thread Starter
Aside from spaghetti sauces, meatloaf, meatballs and cheeseburger mac and cheese (homemade), stroganoff and related homemade "hamburger helper" meals...

What else can I make with ground beef?!? Using non-exotic ingredients? We're getting so sick of the same 'ole same 'ole and have used up much of the other meat in our freezer so I'm trying to get creative with this...

Sloppy Joes? Not sure if that falls under the Hamburger Helper category. I make it with a lot of extra veggies (carrots, mushrooms, onions, garlic, celery).

What about chili? It's a big hit here - lots of beans & veggies - yum!

Nachos?

Stuffed peppers?

we use ground chuck for burgers, TACOS, shepherd's pie, and cheeseburger pie (made with eggs and bisquick). Also, lasagna.

Beef Barley Soup

I use a recipe that calls for chunks of beef roast, but just sub ground beef instead.

Meat balls (small for spaghetti, larger as an item during a meal)

Goulash:
1 lb ground beef
1 large onion, chopped
1-2 diced green or sweet yellow peppers
2 tbsp olive oil (or other cooking fat)
2 tsp paprika
1/8 tsp cayenne or chilli (optional)
1/2 tsp salt

I put it all in a crock pot and leave it in there all day (8 hours). Serve over egg noodles, rice, or little dumplings. Many like to serve this with a dollop of sour cream on top (mix it in, yum!).

There is a thread in the TF forum about this very thing. Lots of good ideas over there.

Empanadas.

I'm not a cook so I used bottled salsa, cheese and pillsbury frozen grand bicuits, but you could health that right up.

Fry the beef, add the salsa, spread 2 TBL of the mixture on each biscuit dough, fold in half and seal with a fork, cook in oven according to biscuit directions, pour melted cheese on top. Serve with a side of veggies, corn, salad or fruit salad. This is dinner for Wednesday.

I also make garlicky potatoes and sausage, but you could use ground beef. Fry the beef, add the poatatoes cut up, add rosemary, and tomatoes of some sort. Also sage and garlic. Cook covered until the potatoes are tender.

Chilli? Did we cover that already?

Did we cover tacos?

Hamburger/Cheeseburger pie? Slap it all in a pie crust with favorite seasonings and bake. It's the same old thing, but it looks a little different. You could go mexican or italian with the seasonings.

I've got a taco bake thing that used broken chips or taco shells in a casserole dish.

Shepherds pie? A favorite, but I've never cooked it at home.
Lasagna? Same as shepherds pie for me. Too much work.

Pastitsio? A total favorite of mine and I do make it.

One of our family staples is beans and rice with ground beef/turkey/sausage. Ground beef is great in it.
If you are looking for something quick Zataran't is SO good, you just brown the beef and add it to it.
To make it from scratch you make the beans and rice and then add the browned beef. It really sets it off if you add boiled egg, lime, and sour cream. mmmm

Ummm, my aunt makes the cheeseburger soup so I don't have the recipe but I could get it. Or you could try and type it into allrecipes.com and choose the one that sounds the best to you (there are several to choose from!)

Spanish rice (tomato, rice, ground beef, peppers, onions, some spices, some mexican cheese blend if you want, black olives, corn).

Swedish meatballs

Stir fry ground beef, cabbage, onion, and some stewed tomatoes for a cabbage roll-ish kind of thing
