Duck recipes

Does anyone have a recipe for duck that does not include oranges/orange juice? This is the first time I will have made duck and I really am not keen on mixing sweet with meat. If it's a slow cooker, that's all the better. Thanks!

I need some duck recipes too. I've just been making mine simply baked in the oven with seasonings and Celtic sea salt added on top--tasty, but nothing special. I don't know about slow cooking the duck though because then it wouldn't have any crispy skin? (the best part )

I like to brine my duck to tenderize the meat a little before slathering it with ghee, seasoning with salt and pepper and slow-roasting it. I usually serve mine with sour cherry sauce, but you can skip that easily.

I just made one on Saturday for the first time! I followed Sally Fallon's directions in NT to cut off all the fat and skin & fillet off the breasts & cut off the drumstick/thigh. I saved the carcass for bone broth, skin and fat to render (got nearly a quart of beautiful white fat!), and threw the meat in lemon juice to marinate. I pan fried them in some of their own fat on one side for 10 minutes, flipped and fried on the other side for 5 minutes. We served it with cranberry sauce (frozen cranberries, spices, honey, simmered with a little water) on a bed of spinach with butternut squash on the side. It was yummy. I fried our potatoes in some of the fat this am and it was great.

The last couple of times we've done ours on the BBQ, upright with a pop can 1/2 full of OJ up inside, just like for beer can chicken, inside a pan to collect the fat. You could use any liquid you liked in the can, even water. On the outside I just used a bit of salt and pepper and then basted it a few times while it cooked.
