Pls share your Banana Bread Recipe!

We've got eight, big and overripe bananas! Dairy, gluten, nuts and eggs are not shunned here ... we're open to all suggestions! Please share.

I LOVE this one! I used light sour cream, decreased the sugar, and replaced the butter with applesauce to lighten it up. Just be sure to not mix it too much to keep the texture light, it melts in your mouth. It's so good, now I'm going to have to make it again and I don't even usually like banana bread!

Whole Wheat Banana Nut Bread

1 cup mashed bananas (3 medium)
1/3 cup oil or melted butter
½ cup honey or brown sugar
2 eggs, beaten
1 Âľ cups whole wheat flour
½ tsp salt
1 tsp baking soda
ÂĽ cup hot water
½ cup chopped nuts

Beat oil and honey (brown sugar) together. Add eggs, mix well. Stir in bananas. Add sifted dry ingredients alternately with hot water, mix until smooth.

Bake in greased 9x5x3” loaf pan, at 325 oven for 55 – 60 minutes. Cool for ½ hour before slicing. Freezes well.

You can use ½ white flour or all.

You can also sub apple sauce for the oil & sweetener

Peel and freeze unused ripe bananas for later use.
