I have a special guest for dinner this Wednesday. She is gluten free and also is a vegetarian. I figured, I could cook buckwheat with onion and carrots and/or quinoa with onion, carrots, corn and peas. But I also want to make a healthy and tasty desert. I'm not a very good or imaginative cook, so everything that I cook needs to be easy. I thought that zucchini bread with honey instead of sugar would be a great choice, but I have never done one which is gluten free. I have a whole bunch of fresh refrigirated coconut flour and I was wondering if it would be possible to use it for zucchini bread? Anyone has an easy recipe of coconut flour zucchini bread with honey instead of sugar?
