Homemade marshmallow recipe needed!

Corn syrup free please! We are trying to avoid processed sugars around here.
DS is also allergic to rice, so rice syrup is out.

Any idea if I can use something like Agave syrup?

I like to think of myself as fairly kitchen savvy - but I really have never ventured into any sort of candy making (just chocolates and they are easy!) so any tips and/or advice is most welcome!

Oooh, I'd love to know this too. DS1 thinks that the greatest part of camping is roasting marshmallows (that's the only time he gets to eat them), but I'm always cringing at all of the scary ingredients that I know are in them!

here is a recipe- I have made some before but not sure what I did with the recipe. They really were not hard to make- just very sticky! Using wet hands to help spread them out helps a TON~

Awesome, thank you! I'm going to try this soon.

I'm trying to decide whether or not to go with the agar agar, or the Lieber’s gelatin...hmmm...I think I'll also replace the corn starch with arrowroot powder.

my blog has them... www.kathysrecipebox.com. I have to make two different versions for my kids because they're intolerant to opposite sweeteners. I make DS's with beet sugar and DD2's with cane sugar. They're very good. They keep in Ziplocs 2-4 weeks. We made s'mores with them during the summer (with peanut butter and rice cakes for DD2, and between banana slices with peanut butter for DD2; neither of them can have gluten or dairy either). They were fun to make. We learned how to make taffy this summer too.

Ooo yay! Does this mean I can sub out the corn syrup in my candy corn recipe for agave? Any ideas???

thanks ladies! I have a batch sitting on my counter "setting" as we speak. they sure taste like marshmallows, hopefully the texture will come out right once they have set. I could not find my candy thermo and DS and I were way too impatient to run out to the store to buy one, so I winged it. LOL My arms are so sore (I do not have a stand mixer and used a hand mixer to whip them for over 20 mins - the one thing DS did NOT want to help with of course!)


More info needed on candy corn - please oh please!!!

do you mean caramel corn? I've successfully used honey for that, so i can see agave being good too.

eta: here's a Googled recipe for hm candy corn.

Yep, that link is pretty much like the recipe I use (from The Ultimate Candy Book by Bruce Weinstein)...except that "mine" uses 1/2 tsp. salt and 2 tsp. vanilla but the rest is the same. And I press my candy into pumpkin molds and it is delicious...tastes like a better version of the bought stuff...it's buttery and no has chemical aftertaste.
Ooo, caramel corn...I'll have to try it with agave. I could so totally justify it if there's no corn syrup. Bad, huh?
Let us know how the marshmallows set! Ds1 would be ecstatic if I made marshmallows...

I made these following Kathy's recipe for camping last month and they were fantastic, especially roasted over the fire. I made a second batch and cut them into mini-marshmallows for hot chocolate the other weekend. I'm enjoying them right now.

The first time I sprinkled them with tapioca flour and this time with potato starch. I like the tapioca flour better.

I have a bunch of local honey and am thinking about trying them with honey instead of the simple syrup next time. I'm sure it will give them a different flavor but I can't imagine it not being good.

I'm going to get some corn-free peppermint candies, crush them and add them to the marshmallow recipe along with some peppermint extract and cut those up to give with homemade hot chocolate in jars for Christmas presents from the kids this year.

Speaking of hot chocolate. Anyone have a good corn free recipe for homemade hot chocolate mix? All the recipes I found online have non-dairy creamer in it which contains corn. We just made it without and then add milk as well as water when me mix it. But if anyone has a better recipe I'd love to have it.

Forgot to say, if you keep them in the fridge then they'll have the texture of the bought kind...at room temp, they get a little softer (but I'm in Georgia, so it may not be an issue in cooler spots).

My ds is allergic to artificial food dyes but has been wanting marshmallows for years...

I have seen a few recipes but I have never tried them... I can't wait though! thanks for the reminder
