Healthy but tasty muffins/other easy to grab snacks

i am looking for some muffin/cookie/... recipes. I am nursing twins and sometimes I am stuck on the couch nursing for hours. I have gotten in the habit of setting easy to eat food next to me so if I get hungry I do have to get up and disturb them. Unfortunately that has lead to me eating alot of granola bars with lots of added sugar and I have been making muffins from a mix because they are so easy but they don't really have much nutritional value. I'd like to make some with at least a portion of the flour whole wheat, higher protein value, and maybe oatmeal but whenever I try to make "healthy" baked goods they taste like crap. I am not so much worried about my weight so I don't care if they are high in fat I just want them to taste good and be substantial.

I've sometimes subbed some of the flour for whole wheat but usually do some white too.

For variety I like to sub the bananas for about a cup of apple sauce and a tablespoon of cinnamon

If you go to the recipes on Whole Food's site, they have some really excellent muffin recipes. We've made their Whole Grain Morning Glory Muffins (http://www.wholefoodsmarket.com/reci...?recipeId=1470) (which have a lot of oil in them, but a lot of good stuff, too ), and their Pumpkin Cornmeal Muffins (http://www.wholefoodsmarket.com/reci...?recipeId=1453). I actually made the PCMs (with whole grain corn flour instead of corn meal) and served them to some VERY picky neighborhood kids, and they ate them! I don't think they thought they were as good as Twinkies, but usually they reject anything I made after 1 bite, so this was huge.

ETA: And I'm not trying to insinuate that you are picky, just that if these kids liked them, you know they don't have that health-food-store taste.

I make up a (plain) batch, and divide it into 3 bowls, since me and my 2 dd's like different flavors. I love cherry so I add in dried, frozen, or cherry pie filling. DD1 loves lemon, so that one gets a bit of lemon extract or lemon zest, and dd2 gets chocolate with a little bit of cocoa powder and chocolate chips. I've seen people customize these with all kinds of favorite fruits and nuts. I seriously love the texture of these muffins, and like that they have the protein boost from the ricotta. In fact, I'm gonna make some of these for breakfast this morning!

I was just coming here to see what everyone thought about my cookie recipe. I think you would really like it!

Wet Mix
1/3 c water
2 eggs
1/4 c butter
1/4 applesauce
1tsp vanilla

Dry Mix
1 c brown sugar
1 c flour
1 c whole w. flour
2 c oatmeal
1/4 c dry milk
1/2 c wheat germ
1/3 c ground flax
1 teas cinnamon
2 teas baking soda
1 teas salt

Mix wet together, mix dry together then combine wet with dry. The mix will be a dryer thicker batter. Bake for 11 to 15 minutes at 350 deg.

This makes a nice cookie easy (very easy) to eat and rather healthy I think. The origional also had 1 c of peanut butter, but I haven't make them that way.

I'm sorry, I don't. DS1 was dx'ed with wheat/gluten and egg intolerance and a dairy allergy just over a year ago so I haven't bothered to seek them again once my bookmarks were deleted when DH reloaded my computer.

Just Googled and this one looks very similar to the one which I used to use.

Here's my banana bread recipe (FTR, this is a much different recipe than the one I posted about last week that bombed, in case anyone on this thread happened to see that ):

Banana bread or muffins

3 very ripe bananas
1/2 cup honey
3 tablespoons coconut oil
1 teaspoon pure vanilla extract
1 1/2 cups whole wheat pastry flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup chopped walnuts or pecans (optional)
Butter for oiling the pan

Preheat oven to 350Ëš.

Mash the bananas, and mix with the honey, coconut oil, and vanilla extract.

In a separate bowl, stir together the whole wheat pastry flour, baking soda, and salt. Add the optional nuts.

Stir together the two mixtures until mixed, but not completely smooth (there should be bumps in the batter). Spoon into a lightly buttered loaf pan, or into a lightly buttered or muffin-cup lined muffin tin.

For bread, bake for 40 minutes, or until center is set (poke the bread with a toothpick in a few places. If there is any sign of batter on the toothpick, it’s not done).

For muffins, bake for 24 minutes, or until a toothpick comes out clean in two or more places.

www.elanaspantry.com has tons of great, healthy recipes. She uses mostly almond and coconut flours in her recipes so they're packed full of good fats and protein. I've convinced myself brownies are a semi-health food now.

If you can find Hodgson Mill wheat bran at the store, there's a great recipe for wheat bran muffins on the box. It makes about a gallons worth of mix, and it can be stored in the fridge for up to 8 weeks, so all you have to do is cook off as many as you want at a time. I believe their recipe calls for lard or butter and sugar, but I substitute olive oil and maple syrup, and they come out the same. Sooooo delicious.
