...will I really need for each stage (shorties/longies)? I only (currently) have my DD for comparison, but she was a small baby (6lbs13) and stayed skinny and lightweight. She's now going on 34 months and was 30lbs2 at last weigh in.

This really depends on if you want to use only wool or if you will be using other covers as well. I have two wool wrap style covers and a few PUL ones as well for day. Its nice to have some that don't have to be handwashed. We use soakers at night. I like having two so that if one is drying I have the other to use. Now that we are into the winter months I'll have a couple of longies to add to the mix.
