I need some make-ahead breakfast recipes

I need some ideas for recipes that I can either A, make the night before, then stick in the oven and walk away while it cooks, or B, cook in the crock pot overnight.

I am totally useless in the morning because I am very tired, even after a good night's sleep (I have a lot of Fibro fatigue, and pregnancy amplifies that for me), so it takes me forever to get around to making breakfast, even though I'm usually starving. My toddler wakes up around the same time that I do, and he begs to eat IMMEDIATELY. Seriously, he wakes up and walks straight to the kitchen (I think that my milk supply is starting to dwindle, and so he's waking up really hungry, since he's not getting milk all night anymore).

So, between the two of us, we need to eat right after we get up, but it needs to be something that I don't need to put much morning effort into. Scrambled eggs are easy enough, but my boys are being really picky about them lately (9 out of 10 times, they decide that they don't like them, even if they gobbled them up two days before), and I need to eat a BIG breakfast (I'm tandem nursing and pg). Help!

I make a breakfast casserole on Sundays that dh and I eat all week.

Brown some ground sausage with chopped peppers and onions. When it's almost done, add some shredded zucchini. Put that in the bottom of a baking dish and then layer a few eggs mixed with milk, frozen hashbrowns, sour cream and cheese. Bake until the hashbrowns are done. You can put any veggies in there, leave out anything, it's really easy to modify.

I also make a big batch of waffles or pancakes and freeze them. They'll toast from frozen in a few minutes.

We eat a lot of bagels too, those only take a few minutes. Or eggs, those are pretty quick.

Do you mean the usual kind, that I would think of as dessert? Just want to be sure I'm not missing another type of rice pudding!

I somehow always tend to forget that I can make large batches of waffles and pancakes. : Thanks for the reminder!

I love bagels too, but I'm trying to go for something with more protein and less carbs. I started putting cheese on my bagel and toasting it like that, but then the cheese caught fire in my toaster oven, so now I'm gun shy.

I know eggs are quick, but the boys just aren't thrilled about them right now.

I like to make quadruple batches of the smoothies from Eat Fat Lose Fat (I can get you recipes if you want) and they keep in the fridge okay if you don't mind the coconut oil/milk solidifying a bit. If you do, you could mix everything else ahead and just add that one ingredient in the morning.

THE baked oatmeal? Like one specifically amazing baked oatmeal recipe? Or just baked oatmeal in general? I actually used to make baked oatmeal a lot, but then I got kind of burned out on it. The one I made had quite a bit of sugar in it (rapadura, but still more than I want to regularly eat for breakfast), so I kinda put it out of my mind...

The idea of grits kind of freaks me out? Is that weird? I am obviously not from the south. If you think you can talk me into trying grits, go for it!

sausage and egg muffins? precook sausage patties so all you have to do is warm them back up, fry eggs and toast english muffins

In a bowl, mix 1c milk (almond, rice, cows), 2-3 eggs, 1/2 butter/veg oil, whatever.
In another bowl, mix 1/3-1/2 c sugar, 1 tsp baking powder, 1 tsp cinnamon, 1 tsp salt.

Put 3 c oats (any kind) in a baking dish. Pour sugar mixture over top. Mix in milk mixture. Let soak overnight in fridge.

In AM pop in oven at 350 covered with foil. Quick oats take about 30 mins. Regular or steel cut should take about 45. You may find it's yummier to pour a little extra milk over the top before baking.

This freezes great!

Breakfast Burritos

Ingredients
eggs
cottage cheese
diced jalepenos
flour tortillas
cheese
sour cream
chopped ham
chopped bacon
Directions
Scramble and cook eggs. Add cottage cheese, ham, bacon and
1/2 cup of shredded cheese.
Spread mixture into tortillas and roll. Put in 9x13 pan. Mix
chopped jalepenos and sour cream and spread over burritos.
Cover with 1/2 cup of shredded cheese.
Bake in 350 oven until cheese is bubbly.

I make a double recipe of each smoothie and put them in the fridge. If I save them for myself, they last four days, but my 22mo will down one if I let him. I don't know how much your boys will eat, so you might need 2-3 smoothies to feed you all.

My DS usually alternates between peanut butter toast (made with sprouted bread) with a cup of raw milk (he dips it, blechhh) and egg muffin sandwiches. Even if he is burned out on eggs, somehow putting it on a muffin with cheese is a hit. Sometimes we add a slice of ham or turkey if we have it.

We don't have much time to cook breakfast because I get up just in time to get him ready for school.

I've tried to cook bacon in advance, but, umm, we eat it all no matter how much I cook.

Thanks! Both of my kids eat so much sometimes that strangers probably think they don't get fed at all, so, yeah, they eat a lot.

Thanks! We're not doing nuts for DS2 yet (we have food allergies in our family, and he's only 22 mos), but I'll have to remember that for DS1 and myself.

I know what you mean about the bacon...it's good to know that it's not just me!

For rice pudding...
I usually make extra brown rice for dinner so I have the leftovers for breakfast.

Place 1 cup rice in saucepan and make according to package. When it's done, add about 1/2-1 cup milk. Bring to boil and let the rice absorb until it's kinda creamy. This works with dairy milk or rice milk, whatever milk you do. Then we add about 1 tsp cinnamon, a few sprinkles of nutmeg, a handful of raisins, and about 1-2 tbsp honey.

You can also mix in a beaten egg after you add the milk, before you add the rest. Just be sure to stir a lot while mixing in and let it cook for about 2 minutes before you add the other stuff.

Also, you can use canned or fresh peaches instead of raisins if you are feeling creative!

I've made this recipe several times. I mix the oats & buttermilk in one container and the dry ingredients in another. Then they come together pretty fast. Leftovers can be frozen and re-heated in the toaster:

Homemade granola is also easy to make and pretty nutritious. My favorite cold breakfast is homemade granola with plain yogurt AND milk. I can't quite describe it but the combo of the yogurt and milk makes a very nice creamy, pillowy texture which contrasts with the crunch of the granola.

fruit and oats struessel (can be prepped and refigerated)
1 1/2 c oats
1 1/2 c flour Wheat white rice whatever
6 tbsp. butter
3/4 c. sugar (more or less to taste)
1tsp cinnamon (depending on what fruit you use)
canned fruit (you can use frozen fresh or even fruit preserves)
mix dry ingredients
add butter (cut in) until it looks like coarse crumbs
spread half of crumb mixture in greased pan
spread fruit of choice on top
cover with other half of crumb mix
bake at 375 for 45 minutes or so


I do a lot of combo's with this recipe you can do less butter if you'd like. It's really good with yogurt on the side. I tried it today with pureed frozen strawberries (omitted the cinnamon) it's tasty with peaches and lovely with raspberry preserves.
