I'm in..I did pretty well last month, but got lazy posting...This month I'm trying to improve

Should post that everything is vegan...unless stated

1-Leftover vegan Jamaican Patties...FANTASTIC!!!
2. I worked and the in-laws took dh and the kids out for dinner...DRIVES ME NUTS! He has ONE night where he has to cook for the kids and his parents take him out almost every fri so he doesn't have too
3. I defrosted homemade tomato sauce, made a mixture of all of our half bags of pasta topped it with hemp seeds and we had roasted spicy potatoes, and peas and corn for dinner...seriously I have no idea what I just cooked..but it was good AND I didn't cave on take out
4. Potato, caulifloer, peas, beans curry on rice...yum!
5. Got called into work so dc ended up w Grandparents, they fed ds Boston Pizza pasta, dh had leftover curry and I forgot my dinner...so I just pigged out on leftover curry and tortilla chips
6. Homemade vegetable/bean/rice soup using the leftover rice frm curry and beans that didn't get thrown in w a ton of herbs frm the garden. And yeastless/wholewheat rea/cracker type thing w rosemary, garlic, basil s and p....Dh finished off the bread in to time...Loved the soup too..lucky I made a big batch for lunch tomorro and hopefully some to freeze
7. Dh worked late and I was sick, so ds had peanut butter sandwich, apple, veg juice and I had soup
8. Tom Yum Noodle Soup and Jamaican patties, even
9. Dh made a super yummy stir fry! And beyond that it was yummy, it wasso nice to come home from work and see dh cooking...seriously twilight zone
10- Take out pizza...and it was GOOD! I was craving pizza for months and I enjoyed every yummy bite!!
11-Thanksgiving dinner Mashed potatoes, roasted potatoes, squash, corn, turnip, stuffing, roasted carrots w onions and apples, buns (and turkey for the meat eaters)
12. Inlaws took us out for "Thanksgiving" since we spent it w my fam...nice to not cook but not have to pay to eat out

1 - Leftovers from Macaroni Grill (my mom took us out for lunch; not an auspicious start, I know. )
2 - Homemade veggie burgers (no recipe, and turned out pretty great!), tater tots and broiled green beans on the side
3 - Ate at Parents' - they brought in dinner (pasta & salad)
4 - Honeybaked Lentils with chopped yams, corn-on-the-cob from the garden (!!)
5 - West African Peanut Stew (from the freezer, woo-hoo!), fresh baked whole wheat bread and Peach-Plum Crisp for dessert.
6 - "Cheesy" Chickpea Shepherd's Pie. SO GOOD. Doubled the milk+flour in the recipe (tip from another MDC mom )
7 - Brown Rice Pasta with Fresh Tomato Sauce, leftover peach-plum crisp
8 - Went out. My laptop was practically destroyed last night (you wouldn't believe me if I told you) so while we were downtown getting it repaired, we grabbed food.
9 - Chickpea Sensation Patties, Thick & Rich Gravy, Sweet Potato Fries, and Broiled Green Beans
10. Grabbed lunch out. Leftovers for dinner
11. Ethiopian FEAST! Gomen (collard greens), Doro Wat (chickpeas), Yetakelt We't (Vegetable stew), Miser Wat (Spicy red lentil stew), brown basmati rice, salad (recipe link)
12. Chickpea patties, garlicky kale, salad with tahini dressing, skordalia and fresh homemade pita bread!

Jumping in here! We are usually pretty good at this but I went and got a hot dog from Portillo's yesterday evening so I want to stick with it the rest of the month! I like how you mostly fill it in as you go or just a couple days ahead, instead of making long meal plans that will inevitably have to be altered.
11- chilaquiles w/ eggs- breakfast for dinner! +broccoli
12- Tilapia w/ apricot glaze, roasted potatoes & carrots (that was a big lunch, later went to Portillo's for a hotdog )
13- home made bread, barley soup, enchiladas
14- shephard's pie (what would it be called with ground turkey in it?)

sometimes lunch is included as a big meal, then we have a light dinner
otherwise breakfast/lunch/snacks rotate between:
cereal, granola with plain yogurt, chips w/ salsa, PB&J or lunch meat & cheese sandwiches, granny smith w/ PB.
we don't get enough veggies

01 - cheeseburgers, frozen mozarella sticks
02 - (planned and made ahead, my house smells yummy!) pot of beans with smoked pork, biscuits for dinner, and we made mac & cheese for lunch.
03 - eggplant parmesan with spaghetti and ragu, with garlic bread on the side, so good!
04 - take-out from Sonic
05 - made up for the take-out, it was grilled cheese sandwiches
06 - pork chops, green beans, bread & butter
07 - the end of the pot of beans, there was still plenty
08 - pork roast. can of creamed corn
09 - cheese-filled manicotti, garlic bread
10 - giant sandwich made of leftover garlic bread loaf and leftover pork roast
11 - tuna salad sandwich
12 - chicken & dumplings (at close to midnight, lol)

41.9% done with this challenge and no cheating! Courtesy of this challenge, I learned to cut up a whole chicken also, i learned to make homemade flavored tortillas. Today, I'm making stock and cooking the chicken to shred for several other dishes and hoping to make granola bars if I have time

?- We generally watch football most of the day on Sunday and have a late afternoon meal but snack the rest of the day. Lately it's been a lot of prepackaged junk, any ideas for healthier, tasty snacks?

What kind of stuff do you usually snack on? It might be helpful to work with what your standards are and look for more homemade spins on them.

The first thing that came to mind was a big pot of chili that you could use for different things: baked potatoes, nachos, or in a bowl with toppings...Not so snacky, but it's one of those things you could leave in the crockpot all day and people could eat when they felt like it.

1. MIL cooked [vegan] tater-tot casserole.
2. Pasta Della California (Veganomicon) with garlic toast
3. Chana Masala/basmati rice
4. Bean & TVP chili with tortilla chips
5. (School night) Boca Chick'n nuggets, tator tots and toast (Cooked at home, but packaged & processed!)
6. (School night) Frozen pizza
7. Vegan alfredo with macaroni noodles and toast
8. Roasted Fig Pilaf, chickpea salad, and green beans
9. TVP soft tacos with garden veggies
10. Made a huge pasta and bean salad for a potluck and had the leftovers for dinner.
11. Bean burritos and taco salad
12. (School night) Ate out (spent the day in the city with friends, and had class right after)

1. Chicken Noodle Soup with yummy whole wheat french bread
2. Chili Cheese Macaroni
3. Take out- DH had to run an errand that took him out near one of our favorite places, it's a little far so we don't get to eat there often, so he picked up dinner on his way home.
4. Almond Chicken stir fry over rice
5. Pizza (used up some leftover spinach and chicken as toppings, pretty good!)
6. Poor planning and staying out and about longer than we'd intended led to us getting hungry and picking something up while we were out.
7. Chicken apple sausage with pasta alfredo
8. Turkey meatballs and rice
9. Chicken noodle soup with honey wheat rolls
10. Stew with homebaked french bread
11. Snacky misc leftover night

3-baked potatoes and chili *dh got us breakfast out
4-ham steak, roasted potatoes, carrots and peas
5-we were supposed to eat at my mom's but we're sick so dh and I had chicken noodle soup and bruschetta, the boys had chili dogs
6-fried potatoes
7-pancakes, sausage patties, apples
8-frozen pizza - was supposed to be sloppy joes but dh and I were out for awhile the kids wanted it.
9-dh and I had hamburger helper (long story) and the boys went to Grandma's for the weekend.

Ugh....need motivation today. I've got a whole chicken cut up in the crockpot to make some stock, and I'm planning to shred it, but what to make?? I could do white chicken chili but I'd need a can of beans, quesadilas but I'd need to make tortillas (lacking time for that today). Nothing sounds particularly yummy today is the problem! I want to live on junk food and chocolate today :

13. Black beans cooked with onions/garlic/broth/corn/cilantro/cumin/cayenne topped with corn flour dumplings(dumplings had egg in them)..It was great. Second time making it and it just gets better..ds even ate it and he HATES beans...how a vegetarian can hate beans I'll never know
14. Dh works late and ds is asking for "panda soup" which is what he calls Tom Yum..got that name from Kung-Fu Panda...I don't know but it's quick and easy so that's what we're having...with homemade apple pie for dessert!
