TED recipe testing

Okay, so I've been considering for a while trying my hand at making some recipes for TED. Just for fun. (Does that give you a sense of what I find fun? Remind me when I start complaining that nothing's working that I said it was "fun". )
I was wondering what you all think I should include in the TED recipes: Rice, millet, turkey? What's your vote? (Lamb's out- I always forget to list it, but it's an IgG I think for DS1- so I'll have to stick with turkey when I do get to this.)
So, I'd like a vote for:
grain(s)
veggie(s)
oil/fat
fruit(s)

I will pick from them the two most voted grains, veggies, single voted oil/fat and single fruit (within our restrictions). So try to give me some good ones.

(ETA: Just updating with our restrictions for those who don't know them. We are free of: lamb, gluten, dairy, eggs, nuts (except pine nuts), peanuts, coconut, berries. Low/limited soy, goitrogens (brassicas), bananas and amaranth.)

Grain: Definitely Millet. I've been driving myself bonkers with it lately (the whole grain anyway). It *really* sucks to sort and wash it. I brought it to a boil on the stove tonight, then baked it and fried it into patties when done. It took *forever*. I didn't season it so it was pretty darned bland but DS gobbled it up anyway. I also tried it once with onion, zucchini and a bit of garlic and it was more palatable. If only I could cook it in tomato juice with some diced onion and green peppers.

Veggie: Hmm, maybe zucchini, butternut squash or pumpkin?
Fruit: Hmm, we're just eating pears now but hope to add more... so, I dunno, maybe bananas?
Fat: Sunflower?

Ok, so I am just giving my preferred ones- and you want ones that aren't considered highly allergic or common right?

grain: quinoa
veggie: pumpkin sounds great this time of year!
fruit: pears- how boring- but they are versatile- you can make them into juice- good for slicing and baking- or into pearsauce- or just plain eating
oil: I was thinking seed oils were out for you- or I would pick grapeseed-

I'd say beets for the veggie. When we did our poll, I think everyone could do beets, and there were a bunch of people who couldn't do zucchini.

For fruits, again I wouldn't do pear because it's a common food (and yes, both my kids reacted to it). I'd pick something less common but still versatile... maybe plum? Then you could do prune juice, dried prunes, and plums (for crisps).

I'd agree with millet for the grain.

And I guess I'd go with olive for the oil.

Because I don't think the TED is a great idea, especially for nursing mothers because it's so restrictive, I'm focusing more on corn, dairy, soy, gluten free (and of course that's because it's what we eat all the time!!). Because I think that takes out most processed foods and lets you eat more variety. But go for it!! Just remember, though, you don't have TIME!!

Updated my OP with our restrictions. If something falls into the low/limited category and gets a bunch of votes, I'll use it but it'll take a little longer for testing.
I was wondering who was going to remember the poll, Kathy.

ETA: This unofficial "poll" will be closed Friday as we're hoping to go to the city Saturday and it's much easier to find grains there.
