What to do with 4lbs of peppers?

I have 4lbs of jalapeno and serrano peppers. What should I do with them?? I already made a ton of jalapeno jelly, I could make more for gifts... but I thought I would get ideas before committing myself to that again :-)

Roast them (on the grill or under the broiler). When the skins are blackened, peel them off, remove the seeds and stems. Freeze the peppers and use for whatever you want, whenever you are ready!

You can also dehydrate them and store them that way...

Hot sauce is a good option also... here is my recipe...

You can freeze them (I chop first) in ziploc bags.

We also make lots of pepper vinegar. I use it on greens, mostly, but it's good in anything that needs vinegar.

Out of sheer laziness I once threw a bunch of whole jalapeños into a ziploc bag and then into the freezer. Whenever I made chili or taco meat I took some out and thawed and chopped them. It worked great

Ferment them for a yummy, probiotic pickled pepper.

Broil, peel, make a slit, stuff with jack cheese, dip into fluffy breading and fry. OMG so good. We have stuffed jalapeno parties a lot in the winter. Set your tummy ablaze!

I just cooked mine (last year) then threw them in a blender and added salt and vinegar for home-made hot sauce. I froze it in ice cube trays and get out just a little at a time so it doesn't go bad. You could probably can it, too...
